How many crates of surplus ammo do you think is enough?

I don't know why you're asking us, you should be asking your significant other. If she shrugs, that seems like an open invitation to build a literal fort out of ammunition crates.

Why not use ammo crates to build the walls in an unfinished basement? Then it will be just like building a fort and should satisfy the wife that the basement is being renovated. So I guess the answer is when the walls are done (segregate and add rooms as required).

Why do the RCMP consider taxpaying responsible citizens to be enemies of the state just because we have a firearms license? Our world is full of insanity.

I want like 10,000 rounds but that isn't gonna happen.

Realistically 2 crates of 1440 or so would be ideal shoot one and always replace it and you always have another if there becomes a shortage.

Two

One to shoot (replace as it gets used up)
One to sell with my SKS when (if) the ammo supply dries up. The SKS doesn't interest me without a supply of inexpensive ammo. I would sell mine when the ammo dries up as I'm not going to reload for a semi auto.
