How much do you pay to butcher your deer?

I do my own with this pile of junk .......... :)

Everything goes into the freezer boneless.

i butcher my own and make sausage etc, too, its easy give a try, thats a lot of money i think, i cut up and wrapped the meat, in less than 2 hrs , then we ground about 30 lbs to hambugrer, with a grinder we paid under $100 for,after a couple you will get the hang of it,i debone everything makes it a lot easier,,wade
 
I use 50% pork and 50% venison. ( you could use a bit less) If you do not use any pork, you will end up with a very dry sausage.
I'm assuming you are using pork shoulder meat for the higher fat content.

I've made lean sausage b4 and it was very dry, read icky. :(

It's back to work Tuesday, so I boned out my buck this afternoon... :)

I like to bone it out then rough trim and freeze the meat in 5lb bags. That way I can take out whatever I require for jerky or sausage recipes later. I cut & freeze the loins in large pieces then trim and slice when ready to cook. Only takes a couple hours (three if you mix your own drinks or open your beer ;)) to bone out a deer and costs nothing this way :D
 
That's a good idea to use a plastic deck table as a cutting block.

Easy on knives and easy to keep clean as well. Cheep to boot. I suppose one could cut the legs of it and use it on a sturdier work bench.

You said it SC. We've been using it for years for butchering. Mostly 'cause it's portable and easy to clean. Just pull off the legs and it stores in very little space too. Just don't drop a big moose quarter on it ;)

Good call on the steel glove, make life a lot easier. I use mine for everything, especially cleaning fish, you get into a mess of perch and it makes life a whole lot easier.

I was a commercial meat cutter for over 20yrs before switching to another trade.

I wouldn't last long w/o it. :redface:

Our butcher charges $85 a deer plus bags. It usually ends up around just over 100 bucks. He has great turn around time, as he only does it for locals, friends, etc.
