Not sure if this is a repost, its a gutless field prep on an Elk. Easy to follow.

its easy i go down the back of the neck and make a cut from the top of the back to the bristet to get 2 peices of hide, leave enough hide for a shoulder mount if so needed.

i would tell that guy holding a leg to grab a knife he wasnt doing much but looking like a chump holding the leg.

Beware. If you leave the ribcage intacked, you can be charged with wasting meat. My cousin was charged with that a few years ago.

You can leave it intact, you just have to take all of the meat off of it. Just like any other part of the body.
 
In the second video the guy takes the meat off the ribs. He gets I think 6 large game bags full of meat.
 
The teaser was like the Cole's Notes version. We use this method a lot for deer now. In some situations, it makes the job easier and less mess. With the bigger animals, and packing meat out, I can see it being essential.
 
I used this method one time when I shot a good sized moose by myself.

I knew that I would not be able to lift the 1/4 with the bone in all by myself on this sized animal so I did the gutless method.

That moose was the toughest eating big game animal I have ever had. The hamburger was tough and I had to re-ground it!! Could have been typical of the moose in the area where I shot it as I know another guy that had one like that form there. OR if could have been because the animal was not hung and the muscle fibers stretched out... I don't know but what I do know is it was the first time I did it to a moose and it was also the toughest moose ever. I have done this method with deer but they were sent away for pepperoni so I don't really know how tough they were.
 
Gutless doesn't necessarily mean boneless. I often use the gutless method but still leave the bone in the legs for easier hanging. I'm just not big on spilling the guts for no reason. I still usually gut deer and take whole carcass home but on anything bigger, no point in touching the guts.
 
Yes, I leave the leg bones in. You have to on the leg with the tag anyways.

The spine, ribcage and pelvic bones stay behind. They account for a huge amount of weight and awkwardness when dealing with a big moose.
 
if i have to drag it more than 20feet it gets the gut less and in to the pack. way easier to pack than drag.

i leave the bone in aswell. less waste and way cleaner end product.
