Ten French hunters who ate meat from a black bear they killed during a trip
to Canada are being treated for the parasitic disease trichinellosis and
several of them remain in a Paris hospital.

Four other people who ate bear meat after the hunters transported it home
to France have also contracted the potentially fatal infection, Dr. Jean
Dupouy-Camet of University Hospital in Paris said yesterday.

The 10 men killed the black bear Aug. 30 during a hunting trip to northern
Quebec, barbecuing some of the meat the same day. Two of the men brought
back bear meat when they returned to their homes in central and southern
France.

As of yesterday, 14 people who ate Canadian bear were sick with
trichinellosis, Dupouy-Camet said. Nine others who ate bear are being
monitored.

Trichinellosis, also known as trichinosis, is caused when a parasite enters
the intestinal tract through poorly cooked meat from mammals and some
reptiles that prey on other wild animals. Patients suffer from diarrhea,
abdominal pain, high fever, facial swelling and severe muscle pain
throughout the body.
 
they were in the bush aug 30th.....hot as hell then.....i,ll bet it was poor meat handling.....bet they hung up the meat in a tree for a day or two :roll: in the hot weather every minute counts to chill down the meat.....a lesson for all of us
 
Wild Bores in Ausi have tric to we used to allways check the livers if theres no spots IE nice clean liver we then cooked it very well just in case.
Dont know if thats the same with bears but i think so.
 


They must have been young idiots. Us older folk know you are supposed to cook bear to the well done stage. It has only been recently that Canadian inspected pork did not need the same treatment. That parasite has been around for centuries I think.

Absolutely, although "recently" means about 25 years, right? Pork is now as clean a meat as beef, but forever I remember having my parents cook it well, then we moistened it with apple sauce - which is still a great combo. I digress...
Depending on what your bear has been feeding on can make a difference as to it's parasitic content, which is certainly to be considered when baiting. Baiting is like creating your own little garbage dump. Hey, that's cool. Get a bear any way you can! Just cook the f'er :wink:
 
first of all it was probly a garbage bear second the peppers probley didnt no how to take cair of the meat and had it hanging in the hot sun for a week and it was probly green.
bear is also sapose to be cooked well.

I was wondering if anyone has used a Pressure canner on bear meat and if it would kill the trichinosis and tenderize the meat as well so no worries about bugs or having to chew each bite 100 times. :?:
 
Modern commercial pork is virtually trich free, and you can basically eat it medium rare, although the texture of pork lends itself more to a medium doneness. FOrget about cooking it until it's leather like your Mom used to do it. :mrgreen:
