Here's how those things work - the 'white-blue' light of your headlamp tends to wash out the colour red. When the red led is used - anything red reflects it very very well. So when you flicker the red LED - blood tends to 'jump out' at you as a blinking object.

Sounds like your idea would work well for color, but quebec and east, the floor of the woods is red with leaves, that beautiful crimson color makes it to the ground at the worst possable time. Which makes it more difficult even in daylight to track an animal.
