The rule book says for Birdshot courses of fire says these are the requirements:

#7.5/8
Max total weight of shot 28.3 grams (1 ounce)
Max stated velocity 1,300 fps

What off the shelf target ammo meets this criteria?

The only stuff I can find is the Extra Light Challenger #8 at Cabelas.

The flat of Winchester Target shells I have are 1 1/8 oz. which are over weight according to the rules.
 
Federal Target Load 7.5 Shot

Part Number TG121 7.5, 2 3/4 inch, 1 oz shot, 1180 fps
Part Number TG122 7.5, 2 3/4 inch, 1 oz shot, 1250 fps

Both are available in 8 shot as well.
 
Those specifications are just for the calibration ammo for calibrating steel. Unless you are the calibration officer for the match, don't worry about it. Just make sure you make minimum PF (currently 480).
