Is .308 and 7.62x51 interchangable in my remington 700?

I have a new Remington 700 in .308 and I was wondering if it's possible to shoot 7.62x51 ammunition in it without adversely affecting the rifle or it's accuracy.

Yep you are good to go , I mix and match all the time in my 700P

I'm sure there will be a difference in accuracy as it is slightly higher pressure in 7.62 military ammo just as there is in .223 and 5.56, but in your Rem 700 there's no issue with slightly increased pressure.
The brass in military ammo is supposed to be slightly thicker from what I hear too, and should be kept in mind when used for reloading as it will cause slightly more pressure.

In my 700P, IVI - S/A is good for around 2.5 " + - where the Portugese is right around .8

Unless accuracy is a concern then no go aheas! Personally I don't see the point of using a scoped rifle capable of sub MOA groups to blast off surplus ammo. But hey if you got it go for it.
