Cacciatore style is how I like ‘em
Soup is my go to, or stew but if you are looking for more of a meal I cook them like my parents always did, in the roaster pot vegetables all around low and slow and the last hour of cook put a pastry over top.
When we lived a little more north west in the province I spent 2 weeks or so every march snaring snowshoe and cotton tails.
I think we are all aware of that. But thanks for pointing out the obvious.

Same in Edmonton. Snowshoe hares infesting the neighborhood and healthy population of cottontails hiding in the ravines and river valley bushes.
If you don’t follow the low and slow rule with jacks you can tell. To me they will be a lot tougher than a cotton tail. Cotton tail and snowshoe hare are more forgiving in the cooking process. Other then that I don’t think there is much difference.
Are they legal to snare in Alberta? It’s been the topic of discussion a few times. When I read the regs it says you’re not allowed to trap them, but the Newfies say snares aren’t traps. Lol.
