I grew up catching over 100 snowshoe hare a year when we ran the big trap line, I can promise you this is not a snowshoe. I know the pic does make it look smaller then it is, I though about it after I skinned it I should have placed something by it for size so guys like your self who have never killed one could get a sense of how big the jackrabbits are
I know I am getting a good laugh from all the old guys trying to tell me what is and isn’t a jack rabbit, none of them have a clue. But next time I post something I will make sure it’s clear in the photo of what it is so they don’t have anything to question. HahahaI think some people are missing this post and are either half blind, have no idea how to use objects in a picture for scale, are viewing CGN on a monitor from 1995 or need to clean their glasses

In other words..."pretty much take the taste of Rabbit from the equation"Marinade the rabbit for 2-3 days in red wine. Brown the meat and then slow simmer for several hours with spices (salt, marjoram , juniper berries, peppercorns, bay leaves, smoked paprika, onion flakes), carrots and celery root
