K31 Scope Centered.

Using the NO drill&tap SWISS mount and off set rings plus a small deflection plate. I have managed to set this up with the scope centered, so the BRASS ejects to the left, the bolt is pulled back with NORMAL effort and it spits them out every time. The deflection plate is stainless 0.015 thickness. Simple and works.

Swiss mount was bought at Tradex. Rings are from e-bay.

Left or right scope offset never bothered me.
By sighting in for 200 yds/m, you will be theoretically the same amount as your scope offset (3/4") in the other direction at 400yds/m.
Drop, wind and light direction will play much more of role.
