Update, 2:42 PM Monday ---Just had a delicious moose stew lunch with my friend, Terry, a couple of hours south of home. We have been out fishing for lake trout on Atlin Lake earlier today. Oh, the joy of living in the North! :)

Caribou liver is excellent.
BUT, check it carefully for cysts when you slice it. Sometimes none, sometimes a few, sometimes the liver is riddled with them. I think they are an intermediate stage of tapeworm development. Have had to discard livers from time to time, there were so many. Look like little whitish bubbles, 1/4 to 1/2 inch across, with the little critter inside.

This one had two cysts that were easily removed before cooking, and it was delicious.

Our caribou never seem to have a lot of liver flukes, but normally there will be a few. They are, however, loaded with warble fly cysts in their skin, all up and down the back. Nasty looking, but never in the meat itself.

That looks tasty, but just looking at it gives me gout.:mad::mad::mad:.Its something I've always kept from my kills, until it crippled me with gout. Gawd I miss a good feed of liver and homemade fries with gravy. Thanks for making me hungry.:):)
 
I consider caribou liver to be the finest liver to be had. One of my favorite meals.
I recall one poor caribou I shot that had so many warble fly larval cysts that I don't think the hide touched the caribou from the small of its back to its thighs.
You do know that there are those who consider warble fly larvae to be delicious.....
cainsey - talk to your doctor about allopurinol (Zyloprim). Taken daily, no more gout.
