I was wondering which weight I should go with in my old 303 for white tail hunting? My local shop has winchester 150's and 180's

...I use ... a variety of bullets ... If I had to go with just one it would be the Hornady 174gr RN and 0.312". I seem to get better results/groups paper punching with bullets 0.312" than with those measuring 0.311".
I would use the 180 for everything. The 150 would just blow up more meat.
That's how it is for me, too. I have taken deer with .311 diameter 125gr, 150gr and 180gr reloads but now my reloads are all Hornady round nose 174gr with .312 diameter. With factory ammunition my rifles also work well enough with Remington 180gr CorLokt and Federal 150gr and 180gr.
Try out whatever you like the look of and see what works best accuracy-wise for your rifle. If you are hitting them in the right place, 150gr is enough, and 180gr isn't too much.
