This might be a stupid question..but can you legally hunt coyotes with FMJ or do you have to use soft points?

Varies from province to province. Here in BC > It is unlawful to use full metal jacketed, non-expanding, tracer, incendiary or explosive bullets for hunting or trapping.

As far as I'm aware non-expanding ammo is illegal to hunt with across the country. Unless it's rimfire that is.

In Alberta, and some other provinces, you must use bullets designed to expand when hunting big game, however coyotes are not considered big game in many provinces.

Seeing you are from Cambridge and if you plan on hunting in farm country you may want to use hollow point. Less chance of ricochet.

FMJ's are legal for use in Ontario, but I suggest you don't use them for coyotes. FMJ's will just pencil through a coyote & it will run off & maybe die, but you will rarely find them. FMJ's are also prone to ricochet which is NOT a good thing in populated Southern Ontario. I suggest you use a frangible bullet like Hornady VMAX's, or just stick to regular soft-point hunting bullets. Keep the FMJ's for target practice @ the range.

I'm curious about how dangerous game solid bullets would be interpreted. I recall an article by Ross Siefried (Guns and Ammo) that recommended carrying some penetrators to finish off downed game - even from lighter .30's and under. Solids allow heart shots from any angle.

I carry a few 500gr solids for my 4570. Drop one in the left barrel and a 350gr flat nose in the right barrel when I walk up to and follow up bears. At 20 yards they hit point of aim

For BC its pretty clear "non expanding", so solids wouldn't be cool.

What's the difference between a fmj and a solid copper bullets? Answer one is a no-no in some areas to hunt and the other is OK to use< but why?

A true solid copper bullet would still be illegal in BC as it is "non expanding" bullet. If you are talking about a solid copper bullet like a Barnes TSX bullet, those are made of solid copper but hollow point to expand, so are legal.

I know the differance, it was meant as a tongue in cheek comment about the petty and arbitrary application of our firearms laws. Kinda like being resticted to 3 shots if you use slugs/sabots in a shotgun for deer, but, you are allowed 5 shots in your centerfire rifle if it exceeds 25 cal, but, does not exceed 30 cal. and Blah Blah Blah...
