Fort St James, second oldest white settlement in BC, west of the Rockies. A bit colder than Prince George. Central area for moose hunting, and since elk have moved into the north after I was there, I can't comment on elk. Deer every place you have mentioned. Likely not enough sun for your wife, thunderstorms common in the summer.
Fort St. John, you are well aware of it there.
Terrace, a bit west of good moose hunting. Mountains to climb, but thick, dense bush in many places. Warmer on average than Prince George.
Kitimat, ditto Terrace, only bush thicker, mountains more heavily forested, weather damper, less sun, few (if any) moose.
Lillooet, like they said, sunny, hot, sunny in the summers. I would say not good moose or elk hunting. Glass goats in the mountains, high in the mountains. A lot of very scenic (scary?) drives. One of my favourite roads is up the Yalicum River, to the north.
Like they said, California bighorn sheep in places to hunt without leh.
Very historic, such as mile zero on the old Cariboo wagon road to Barkerville. Home of BCs famous hanging tree, just don't look too close at the history of that one! Good place if you like exploring old mines and rock hounding. In August the natives split salmon, place them on racks in the sun, covered by a plastic tarp above them for shade, and without any salt, or other curing, let the warm winds dry them. Very interesting to watch.
And oh yes, no one mentioned it has one of the best rattle snake populations in BC! A game warden I knew was visiting people at the edge of town, sitting in the porch in the evening. The dog was interested in something in a clump of bruch about fifty feet away. Game warden went to look, and shot one of the largest rattle snakes he said he had ever seen! Enjoy it.
