Looking for a good .308 hunting scope...

The Bushnell Elite 6500 (2.5-16 x42) at Wholesale Sports for $549 is pretty tough to beat for the price. A bunch came with a free $100 trail camera last time I looked too. A slight bit more then you were looking to spend though.
 
... I need a scope that will perform well in the bush when hunting moose and deer which may be on the run.

My hunting situations here in Ontario dictate that shots will likely be 60-100 yards in the bush, but I would like to feel confident out to 200 yards incase I hunt a field or across a lake....

With the likelihood of shooting at moving game, up close (especially huge critters like a moose) you should absolutely be looking at a scope with a low end of 1 or 1.5x. And if you want to shoot at 200 or even 300 on deer, a 4x top end is quite sufficient. I'm an Ontario hunter too and all I can say, and this is only my opinion, is don't get a scope with any more than 2x on the low end.

I have two Bushnell Elite 4000 1.5-6x scopes (1 on my ML and 1 on a .358 Win) and one of those would be absolutely perfect for your intended use IMHO. If you were lucky enough to find one on the EE they should sell for around $250. In keeping with your budget you should still have no problem finding a good used Leupold VX3 in 1.5-5x or 1.75-6x. There are lots of other choices out there, but those jump into my mind as two "can't go wrong" options.
