Was actually more of a rookie question I am unsure what all calibers can be run out of that upper and lower setup vs say the AR10 calibers.

All existing popular hunting and sporting rounds fitting AR-15 magazine or 2.260"/57mm. You can use longer rounds, but will have to load manually.
So, there are two limits. overall round length and case base diameter. As AR-15 was designed for 223, if using larger case diameters, bolt face walls need to be thinned out. .50 beo bolt, for example, has paper thin walls.
If you go to AR-10 platform, limits there are defined by 7.62x51 round. So you can use medium length rounds like 6.5 creedmoor, 260 Rem etc.

Do they take a standard bolt carrier and trigger group? I guess what Im asking... Could I just strip my ARs and replace with these upper/lower sets?

So far the only ar parts they don't take are trigger packs but other triggers like the Geissele work

Sounds good, along with .50 Beowulf I think it would be nice to see .450 Bushmaster, .458 Socom, and .338 Federal. With these non-restricted sets coming in there is suddenly much more of a market for these big bore calibers as they are excellent for hunting and were previously restricted to range use with the AR-15. Hunters might also like to see 6.8 SPC.
...also if you can find someone who has 5.45x39 18.5-20" barrels that'd be cool...
A 50 Beowulf package is a good way to get me to spend a lot of money

Really... a .17hmr setup? That would be SO cool... but where are mags going to come from? Never heard of a .17hmr AR compatible magazine.
Still, my all time favourite small round so if it was made avaiable id have a hard time NOT buying that setup.

300 blackout, 7.62x39 and 9 mm. And for sh!t$ and giggles how about some of the wildcat calibers utilizing the .223 parent case. 7.62x40 wt and .224 valkyrie
