Can you have some mags that hold 10 rnds on some of the service rifles and only 5 on others? If so, which ones can you have 10 rnd capacities in? I mean in some service rifles are you aloud 10 rnd mags, and if so which ones?

As far as I know, this side of the border, there are no semi-auto service rifles that are allowed to have over 5. The only exception to this may be 9mm converted rifles which I would think would fall under the 10 round max capacity limits of the handgun magazines that they use.
 
You can use AR Pistol magazines in the AR Rifles. But I don't think the rules allow it.

Match conditions for service rifle competition require participants using a semi-automatic rifle to change magazines during the record shots. For 10 record shots, two 5-round magazines are required. If sighters are allowed, then they must be fired from a third magazine. At no time, will anyone have more than 5 rounds in a magazine.

One of the Service Rifle Guru's will probably chime in I have no idea but the rules seem to state if its a semi-automatic no more then 5 rounds unless your military or LE. :)

As pointed out, the LAR 10 round pistol magazines are legal.
Whether they could be used with more than five rounds in them for Service Conditions matches would depend on the rules for the course of fire for the competition. Check the rulebook for the matches you will be shooting. You will likely find a five round per magazine limit, with mandatory magazine changes.
For example, the NSCC rules for Matches 1-12 allow no more than 5 rounds per magazine. If a match involves 2 sighters plus 10 rounds on score, three magazines are specified: one loaded with two rounds, and two with five rounds each.

Perhaps the rules were written before the LAR pistol mags became available when all the civvies were limited to 5rnds
