Mail order hunting ammo in Canada?

Shipping costs are the killer. Lots of place to pick from (look up for starters, most sponsors sell ammo), but locally you don't have to pay shipping, so unless there's something rare or exotic you need, locals are your best bet.
The only exception to that rule is if you're going to buy in quantity. Some shops will offer free shipping by the case load, or spreading out the shipping costs over a large order may make sense.
"...Not sure if I'm best served by the local shops..." Depends on the amount of ammo the shop buys, usually annually, from their distributors. The more a shop buys, the better the credit terms and wholesale price they'll get. Shops are limited as to how much ammo they can have on their shelves too. Means they can be limited as to the brands and bullet weights they carry. However, they can order anything you want in any quantity you want. Just be prepared to pay up front for stuff you order.

There just doesn't seem to be much of a selection for one of the calibers I'm shooting (7mm-08)... A bit of shipping is reasonable, and mail order outfits generally offer their wares slightly cheaper than the retailers (little overhead), so is my logic for asking this question...
If you are looking for premium ammo you would be just as well off to buy a simple single stage reloading press setup and roll your own. You get exactly what you want at a much lower cost per round and can customize ammo to suit each gun you have.
