Making Duck Stew. Lots of pics...

Ok, here is one of my favourite ways of preparing ducks.


Step 1. Get yourself some ducks.

Step 2. Take 4 large duck breasts. In a small bowl mix 1/4 of a cup of white flour and your favourite spices. I like thyme & sage. Coat the breasts with this mix and cube them into bite sized chunks.

Step 3. Add 1/3 cup of your choice of oil into the pot. Avoid butter. When the oil is hot, brown the meat well.

Step 4. Add 1 carton of beef stock and as much water. 1/2 a large onion, a handful of mushrooms. Cover it and let simmer for about 3 hours on very low heat. Stirring every 30 mins. Usually once this is done, I let it sit, overnight and finish it the next day. But if you have time, do it in one shot.

Step 5. Chop your vegetables and add them. I usually add potatoes, carrots and peas. Let simmer for 2 more hours.

Step 6. Mix 2 tbsp of white flour in a glass with hot water. Mix it well with a fork and get out any lumps. Stir this into your stew. Let simmer for at least an other hour.

You're almost done. You can eat it now, but I usually put it in some dishes and freeze it. Very convenient and you can heat it up in a few mins and have a couple of bowls. Great to put in a thermos and have a hot meal while outdoors. 2 more very important steps remain.

Step 7. Salt to taste and try a bit.

Step 8. The most important step of all. When your satisfied that it's perfect...

Get your wife to clean up!

I do it similarly, but

1) I start with a pound of bacon instead of oil.

2) I cook the duck and veg in the bacon fat

3) I add some beef bones in with the stock

4) I also add either a can of dark beer or 2 shots of whiskey.

It makes the stew comes out darker and the wood from the booze adds another layer of flavor to the goop. Even my wife likes it!
 
I'm willing to bet dollars to spend shot shell casings that your wife hasn't seen this..:D

That would have been a losing bet on your part my friend. She puts up with my ####, but occasionally has to remind me that sometimes I'm not nearly as funny as I think I am.

That's a great idea with the beer and bacon. Adds a whole new "man" dimension to it.
