What caliber do you recommend to rebarrel an old Martini action? It should be 8.3mm or greater. 357, 45, 45-70, or something else?
 
Go .45-70. Best choice IMHO. .45LC would also be cool but would limit possible uses. Another interesting option would be .577 Snider ;)
 
It seems to me that a lot of the answer revolves around what do you want to do with it and how good are your abilities and desires in regards to creating and loading challenging cartridges.
If you just want a plinker out to 100 yards then most any centerfire caliber over .34 caliber is fine. If you want to use it for hunting or long range target/silhouette shooting then a rifle cartridge, preferably rimmed is the answer and in the case of BP specific competitions, obviously one designed for black powder. You might want to browse through "Cartridges of the World" to get an idea of the choices.
If you are not a die hard reloader of the obscure then stick with calibers than are currently commercially available like 45-70 and 38-55 but if you are really dedicated then I would suggest something based on a 45-70 shell like 38-56 or 40-70 bottleneck.

Put it this way, What year is the action date? made before 1898 it's an antique & if over 35 caliber it does not have to be registered. FACT for all those who would like to know. I did it & verified it with Epps. 444 marlin is a super caliber. Easy to shoot & the extractor is almost the same as the martini enfield. No need to screw around with 38-55 or 45-70. Fine caliber they are, but do you need the expense. Your call.

I have Martini in 32/40. 45/70. 45/90 all use BP well like mooncoon said what are you going for hunting or targets.
