Meat cooler for DIY butchers

I'm building my Coolbot controlled meat cooler on a trailer. The bottom 1/2 has been started and kinda got put to the side for other projects. It will be a mobile meat cooler when finished and the gennie mounts on the trailer tongue. Interior will have D-ring's on walls , ceiling and floor to hang and secure large game 1/4's or whole deer (head and legs off) while the unit is travelling.
Been kind of a long term project but I hope to finish it this year sometime LOL

Very "cool" idea. Doesn't take up room in existing structures, makes the gennie portable as well. Lots to like.

so far I have taken a 5x 8 flat deck , what remained of a tent trailer when I was finished with the sawzall. put side rails on it and used it as a quad trailer for a few years till I decided to swap out the wee wheels and crappy axle for a robust 3600lbs axle and hub combo. Now it has clearance for full size Jeep rims and tires.
Then I redid the inner frame work to bump it out over the wheels and then had 1/16" thick Stainless steel sheets custom formed to my desired dimensions/shape.
Here is the trailer so far. Need to insulate the already built part and finish work for what will be cargo holds on the trailer sides.
Still have to rework and skin the rear section, lengthen the tongue and fabricate gennie mount , fabricate and install hold for 70liter fuel tank, tie in the front corners and then build the top portion......lots to do yet.

If I were to built one it would be spray foamed and air tight.

I would use 2 air conditioners set up on a timer so to keep them from freezing.

Other option would be a "cool bot".

I would also install a dehumidifier and small hole in floor for drain.

Air Conditions are in themselves dehumidifiers. That's why on window units they drip water to the outside and on central air systems the indoor coil has a condensate drain line to run the condensation water away to a drain.
 
Ive spent more than a few years building and maintaining (electrical) an industrial abattoir and the standard practice for building their facility carcass coolers, production areas hot and cold, and packaging area is straight up insulated panelling around a standard steel building frame. 4-6" foam interior and 6" fibreglass core for fire separation. Supplier uses kingspan. Im not sure what their shortest panel is but they're cut with sawzalls and placed in track, and click together like flooring. Used as a ceiling as well. Sanitary and effective.

my friend has Zero-Lock panels which are high density insulation foam trapped between 2 sheets of aluminum. He got them from the Maple Leaf/Sofina Foods smoking/curing plant shut down for good (vancouver, fraser street). It's what we are contemplating using to form the upper 1/2 of my trailer.
