meat hanging temperature

Tod, let me guess.. it's a deep freeze stood up on end. You can walk in but not very far. :p

Some of the farmers we hunt with keep a deep freeze in the horse trailer with a gen set running it. Not a bad set up for early moose season.

7 degrees celcius is the majic temperature you want to beat - below that bacteria growth is severely reduced. So 3-4 sounds perfect to me. Won't dry the meat out as bad as zero would, but won't let the bugs grow.
 
Our meat coolers at work ran around 0 deg. C. It was actually colder at night with no one around and the door being closed all night. It should run as cold as possible w/o freezing solid. A FEW (only a few!) ice crystals in the muscle won't hurt.

7-10 day minimum is best wih the hide off. Some people worry about the meat drying out, but that part (not much) goes in the grinds with no loss.

Fellow had a corner of his garage insulated. It was the corner that saw very little direct sun through the day. He made two insulated walls to go into the corner, one with a door, the other with an heavy duty AC unit.

Took it down for the off-season. Great rigg :idea:

So the insulated, A/C box idea does work? I was thinking of doing the same thing. Meating cutting/wrapping is no sweat, it's just trying to find a cooler thats the hard part. Deer season is no problem as the garage temp is perfect in November as a rule. How would you figure out what size air conditioner is needed?...KF

Seemed to have good results, but I'm not sure of the size of the A/C unit. The box itself wasn't that big, 6x6, IIRC. Best to talk to an A/C guy 1st and pick his brain.

Just hung a whitetail up tonight in the garage. It is about 3 deg out tonight and supposed to be about 6 deg tommorrow. So if if the weather holds like this for this week, should I be good to go?

How long do you guys normally let them hang. BTW this is only my second deer ever so I am still pretty new to this.

Sounds like it will be cool enough. Just keep an eye on it, if it starts to get a bit "sticky", it's not cold enough.

Cover the windows up to keep the sun from warming the inside of the garage. :idea:

As long as the carcass is cool and dry, a week or more is a good time.

Just cut up a deer yesterday, so 1 week, but it was too warm so after skinning it and letting it hang overnight we cut it in half and put both halves in the fridge for the rest of the week, about 2-4 deg.
