What is the difference between the military muzzleloaders and the regular ones like the Kentucky or Hawken style? Is it kind of like today with sport rifles and military rifles?

In practical terms it is the sights and the triggers. Military rifles tend to have fairly coarse sights, almost always single triggers and usually require musket caps although you can get #11 nipples with a 5/16" base. Percussion guns are usually .58 caliber and the flintlocks .69 or .75 cal. There are other differences but those are the practical ones.

Generally speaking, military ML's are more ruggedly built, have standardized bore sizes (usually large) and are often smothbores. Rifling became popular in muskets from the percussion era. Finish and fit may be less than one would find on a fine rifle.

Kentucky(usually small calibres, .45 and under) and Hawken(large calibres .50 calibre and up) styles were custom made for the most part. Then as now, military firearms had no decoration and until the U.S. Civil War(always say, "Which one?" when hearing one of our Southern Cousins says, "The Civil War."), were smooth bores.
