Mmmm...mixed bag meatloaf

cleaned through the freezer last night and decided it was time to use up some game from last season. quite the mix in this loaf but it turned out great.

used the meat from:

1 deer roast
1 medium raccoon
2 squirells
5 duck livers, hearts, gizzards
1 wood duck

mixed up the normal garlic blend, milk and bread crumbs and used cream of mushroom soup for the topping. actually very surprised by how good it is:dancingbanana: i nicknamed it the "hillbilly special":D
 
Yeah, it does sound like road kill. I don't know anyone that eats raccons or squirrel...then throw some duck guts(I like hearts BTW) in with it...mmmmm tasty.
 
they all taste excellent when cooked seperatly so it only made sense to mix them up;)

if you havent tried squirell or racoon you dont know what you're missing. squirell tastes the exact same as rabbit. coon has a stronger taste but its still pretty good.
 
Last night being Super Bowl Sunday, I had my annual party. This year it was venison roast in the crock pot, roast chicken in the oven. The chicken was going to go on the rotisserie on the barbeque, but at -31C out with the wind chill it would have taken forever to cook. Serving squirrel or wood duck? My buddies would have eaten that, no problem. Raccoon and duck organs? Hmm... don't think so.
