Getting a bit ahead of myself, but I am really looking forward to stocking the freezer with some moose cutlets!

Tried some that the local butcher made up... he's got a special machine or something to do the tenderizing... then, lightly breaded like a veal cutlet....

Nobody ever tells me anything! :D

YOu mean minute steaks? I think it's the only way to go on all but the most tender moose/elk steak cuts. They cook up fast too.


Ever tried cured moose roast,? It's kinda like corned beef, I got about 15lbs curing in brine right now.

Is it actually a roast?

I have a recipe for corned deer. Excellent sandwich meat! But it's not actually roasted.
 
Yes, I take a roast then cure it in Morton's tender quick.

Cook it in a crock pot and eat it. It is best the next day and tastes great.


The last moose I shot is so tough it is impossible to eat as a roast unless it is brined in tenderizer. This moose is tough, all of it, even the hamburger is tough. I have never seen anything like it, it is truly unbelievable.

I do deer like that also. My buddy has a machine we pass the steaks through. YUMMY!!!
