Taking the hide off does allow the carcass to cool faster which can prevent the meat from spoiling in warm weather.
We try to follow the weather forecasts carefully. We know where meat coolers are and are prepared to drop everything and spend the couple hours round trip so that the meat does not spoil.

Consequently, we have left the hide on and the weather warmed up to about 17C. Upon arriving at the butchers after skinning he purposely checked the temp of the meat because he was certain that it would have spolied. He was quite surprised at just how chilled the meat still was - because the hide is such a good insulator.

This works really well. Sometimes we will do the same around the tent etc. if we will be out for a few days. Bears like to eat our wall tents for some reason
its like a crab mommabear tells her cubs you only eat whats inside :p
