I dunno one of those touchy things I don’t wanna mess with only thing that pops into my mind is when Dlask made their original 8.5” super shorty shotguns with a similar pistol grip they were sold as non restricted but got a call from rcmp which ended it pretty fast and got reclassified as restricted not qualifying that overall length, now they only sell it with houge stock attached to be no less than 660mm. They do manufacture their own barrels so it’s considered factory stuff I would assume when they can offer 6” serbu clones as non restricted.

I've seen people say this before. How do you actually go about this?

You swap the stock, and then call the firearms office? Get it varified by a smith? How do you get this restricted off their books?

The Mossberg Shockwave with 14" barrel is just 26" with its bird head grip. This would be about 3.5" shorter.
