So I just got a nice Mossberg 802 off the EE. Great looking gun. Problem is that I can't get the bolt in! I read he online manual but still, can't get it in. Any advice?

You probably need to re-#### the bolt.

When the bolt is removed from the rifle, the striker assembly may
become shifted into the released position. The bolt cannot be reinstalled
in the receiver if the striker assembly is in the released position. To
recock the striker assembly, hold the front half of the bolt assembly
firmly. Rotate the bolt handle clockwise to recock the striker assembly

Well I got the bolt in, but I had to remove the stock to do so? I can't cycle the bolt of the rear screw holding the stock to the action is tightened all the way. It's weird.

Before you do anything permanent, make sure the bolt is assembled correctly. A lot of bolts will have small protrusions and such that will keep you from inserting it if it is not in the proper configuration (which has the added safety benefit of making sure you can't fire it with an improperly assembled firearm). As a post said above, this is sometimes as simple as checking to see if it is cocked. I haven't owned a Mossberg, so I don't know the specifics but I would first try cocking it and reinserting, or if it is already cocked, letting the striker down and try inserting it uncocked.
