So I bought a 500 the other day for a $125. The bluing was missing and there are some rust spots on the barrel and tube mag.

It took me the better part of two evenings but I have completely sanded and polished all the visible metal; starting with 240 grit and working up until 3000 grit. The gun looks great. And I did all this work with the intention of reblueing it when I was finished. But I like the polished look so much I am thinking of keeping the metal bare.

My only concern would be with an unprotected service like that how do I prevent rust? And what even else may happed

No experience with the metal bits, but for the wood I would grab a fine wire brush and some furniture stripper, put it one and let it sit for a bit, then gently brush the finish off, be careful with the wire brush around the checkering, I use a dental pick to get it the grooves and get the old finish out. Done this on several guns and it has worked well.

Time for some befor and after pictures.

And I will post more when I finish with the wood

I re-did my Rem. 970 stock. Easy to get varnish off the non-checkered portions with Cdn. Tire stripper. The finish in the checkering looked good, so I left it. Refinished the rest with Tung Oil. Turned out great. As regards the metal, I would re-blue it , either hot blue at gunsmith or cold blue, but that is a lot of metal to cold blue.
