need help choosing shotshell & patterning for geese

Blazerman, for what it's worth, I too hunt Saskatchewan and we get big Canadas, Lessers, Specs, Snows, Ross', Mallards and pintails all showing up in the same stubble fields. I long ago standardized on modified choke, Kent Fasteel 2 3/4" #1s. Best compromise for all sizes of birds at all ranges (over decoys!) You might need bigger shot / longer shells for pass shooting. Please graduate to decoy shoots soon. The one thing that drives the birds away to early migration is neophytes blasting 'em on the roosting slough! Good luck.
 
Don't get the chance to kill "hundreds" any more ... but do get out & about.
My favourite is Kent 's Tungsten Matrix - 2-3/4" X 1-3/8oz. @ 1375.
1's for geese (sky carp) and 5's for ducks. To hell with the cost ... this stuff really works, is good in my "older" fowling pieces & kills cleanly at distance!
( A nice non-tox replacement for Win. Super X "DoubleXX". )

PS: Waterfowler ... x2 for the Chessies !
