I would anodize it all then offer colored outline at an slightly increased cost as it does look good.

Engrave first, then all black anodizing. Easy for user to paint or fill in engraving using grease pencil of appropriate colour after.
The problem with engraving after anodizing is that the letters will lose their shine as they fill with crud. We engrave our control boxes after anodizing. They look amazing when clean but the lettering eventually turns brown and black as it fills with dirt, oil, etc.
I was thinking more along the lines of CeraKote in the engraving.
