I want to join a local club and start doing skeet shooting. The pump action I currently have will definitely not work for this so I am in the market for an under\over 12g shotgun ... my budged is on the low side since I will only be doing this maybe once every other month or so just for fun.
What should I be looking for ... make/model and so on ?

I am also looking for a 12g for my son. will a single shot shotgun work for skeet shooting for him to learn on ?
 
Probably Trap shooting for the most part.
my only shotgun i have is a mag fed, dont think those would be allowed
 
Are you familiar with the games at all? Have you had much experience of trap or skeet?
A skeet gun with removable chokes can be used for trap but a single shot trap gun can’t be used to play skeet.
Pumps can be used for 5 stand and skeet but are not preferred due to the extra movement of racking the pump.
Over/under, semi autos hunting or competition and side by sides can be used for all game types with varying degrees of success if they have removable chokes.
A gun that doesn’t have an auto safety is preferred.
28”inch barrels on a semi should be minimum and 30”inch on an over and under.
What size/age is your son?
 
my two cents

join a club first.
make friends with the regular shooters.
Most of them are good guys and will let you try their guns.
Find one that you like and get that.

One of those Turkish brands like Canuk, Chruchill, etc will have something around 1k.
personally I like the Browning Cynergy CX with the synthetic stock. It's around the low 2k range.
You don't have to spend 5-10k to get a good gun to enjoy the sport.

Unless you travel to the US regularly, I heard they have big sporting events that have manufacturers that show up and let you try their guns, It is gonna be a lot more difficult to find events that will let you try the different guns in Canada.
 
Skeet is part singles and part doubles. You can hit both clays of a double with a pump if you're fast with it; I've done it despite not claiming to be much good at skeet!

For a young learner with a single shot gun, there's a chance that a club will launch just singles at first, but you definitely want to move up to a gun that'll let you at those doubles. You'll see a mixture of guys with over/under, side-by-side, and semiauto at the typical skeet field.

If you have trap available, that works with a single shot each time.
 
Shooting a light single shot shotgun in 12 gage for a few rounds of trap will surely introduce your son to the concept of recoil. If you want a half decent over and under, look for a used single trigger Baikal with removable chokes - you should be able to get one for ~400$. They are built like tanks, and can cover all your shotgunning needs, including hunting.
