New to ontario - curing deer?

Usually I process next day or the latest day after. Depending on how much time I have really.

I don't go after manky old bucks with big racks so have not ever found an issue with fairly quick (for some) butchering.
 
most of our hunting seasons in BC are 4pt mulie or better, other than the 31 days of any buck in october, except for regions 1 and 2 which are any buck all season. By and large I try and capitalize on the october any buck openings here at home and usually fill at least one tag in region 2 , often times both. Starting another hunt tomorrow an hour east of me where spike fork bulls are open for another week and a friend has been seeing lots of whitetails. Kinda hoping I see a nice 2 or 3 year old whitey but if lay eyes on a 4pt or better mulie..... I will be droppin the hammer hehehe
