While i'm not new to reloading rifle cartridges...been doing that for many years with total success...I do have a few questions about shotshell reloading.

here we go:

On hand:

-Fed "Top Gun" 12 ga. 2 3/4 hulls that were loaded with 1 1/8 oz of 7.5 lead shot.
-Red dot powder
-Win AA "gray wads" - WAA12L 12 Gauge that say are for 7/8oz to 1oz loads.
-Fed 209A primers
-Steel shot...(could not find lead shot locally...all back ordered)

My young son want to shoot more hand tossed skeet and I'm ready to load, but I can't seem to find a light load recipe for these components.

any help out or suggested safe recipies there??

You should not use the steel shot with those wads, you need special wads for steel shot. You should get a shotshell reloading pamphlet from the powder manufacturer of choice and follow those recipes exactly, no substitutions, look at the loads for those particular empty hulls, as all hulls have diff. capacity. If they don't show loads for those hulls, get hulls that they do have data for, same with wads, powder, etc.
