As much as I love my Mossberg 500, what grijim said is true. There is no real wood upgrade like you would fine with remington 870 express to an 870 wingmaster. I have the "durawood" stock on my 500 and although its kinda cheap, it looks decent and I cant complain about it. Perhaps old mossberg 500's may have real wood on them.
 
Boyd's sells a replacement stock if you want to finish it yourself. Not sure about the forearm, though.

I picked up a cheap old Lakefield/Mossberg 400G at Epps. Same gun as the 500 afaik. It has nice wood, though I didn't like the colour so I sanded it down and restained it. Nice quality wood was obvious once it was sanded. I think the gun is from the 70's.
