I have a Cartridge that does 1800fps with a 220- 255gr projectile its shape is FN.

Also

a Cartridge that does 2100 fps with a 200-220gr projectile its shape is RN


Say we are hunting big game, What difference ? if any.... aside from calibre diff of around .060 -+

If the second hypothetical is the 9.3mm, it can do a lot better than that. Otherwise, the only difference in performance on game will come down to the quality of the bullets chosen.

Scott, i would have to say we are Stalking bush, not super Dense but you might seldom see 300meters away unless it were across a 'gulley/draw' , in places we might encounter waist high shrub amongst mature eucalypt forest ...
i feel like givin the calibre will make people lean more toward one over the other....... i left out a little detail, such as the first can quite easily be warmed up into the 2000-2100fps with the lighter side of my examples (220) but also on the same token, the latter can be whizzed right up with lighter bullets again, giving too much difference for my idea behind the post.

they are both around about this configuration in first post.

we tend to argue cartridges an calibres in their full potential , where it seems alot of us arnt up in squeezing everything out of these cartridges.

Your probably talking about a .375 Win with the FN vs a .308 Win with the RN... either will kill just fine, but if you are shooting distance, I would use 180's in the .308. For scrub bush hunting the RN's will be dandy. I shoot 200 RCL's in my .358 BLR and 200 RN's in my No.1-A Whelen... both are actually surprisingly flat.

but i am thinking the same, same same almost but if there were any distance say close to 200m, the faster would be the sensible option more often than not.
 
to my way of thinking, when you're talking about velocities that low, your choice would be very dependant on your choice of bullet in each and what each has for a minimum reccomended velocity for proper function of the bullet. obviously something "softer" with a lower minimum velocity requirement will give you a bit more range than a heavily constructed bullet.

what brand/model of bullet are you planning to use in each?
 
I think with the information given the 2100 fps round nose would probably be the better of the two choices if the bullets are of equal quality. Should get a little more penetration as well.
 
If it's the one I'm thinking of (.303) then cartridge 'B' should give better penetration, and that would be my pick. It would also likely hold it's velocity better downrange than the .375 Win.
