have you considered making a synthetic or plastic "full-wood" stock set? Something in black or grey wouldn't be too ugly...

Where did you find these sets?Too rich for my blood. I believe the current going rate for a complete wood kit WITH all the metal parts is 100-150. That's your competition. If you could turn out a "perfect" stock set in interesting types of wood at $150ish I think you'd have a real business on your hands.
That said, just because you can't cater to everyone doesn't mean you can't cater to anyone. Surely there is some interest at any price point.

Alberta gun stocks will do walnut No1 MIII for $250.00.I was looking at their work at the recent Edmonton gunshow and it was very nice.They also do Ross stocks.They are pantograph duplicators and are located in New Norway Alberta.
