No gut, debone method

Not sure how you could get the tenderloins out w/o hauling out the guts/lungs. Why would you wanna do that? :confused:

No other choice in the middle of nowhere....just cut horizontal to back bone rearward from last rib reach in and tenderloin is right there. Nothing to it and nothing more needed than a 3.5" folding knife.
 
In BC and Alberta, according to the fish cops I've talked to, you don't need to take the rib meat.

I just use my fingers to get the tenderloins out on moose. You only need a knife to cut as far up under the ribs as you can reach and back at the pelvis. Never tried it on deer.

Different story than I've got here in Alberta.......edible meat includes meat covering and in between ribs.
