I posted a comment in the Gunsmithing thread about rust removers. Any dilute acid (muriatic etc) will remove the bluing but you should be careful of some of the rust removers, as they can leave unwanted coatings on the steel.

I just used Evaporust on two old Cooey shotguns. Made a tank out of plastic eaves trough. Worked like a charm. Took all the rust and bluing off. Let it soak over night. Had to draw file some of the pitting but otherwise there was no rust
