Ontario spring turkey 2016

Went out today for the second time hoping to close the deal on this season by filling my second tag. Total heartbreak! I didnt see or hear a single thing all day. At noon, I decided to call it quits and took down my decoys and packed up all my stuff. I was just about to walk out my blind when I started practicing my mouth call and sure enough I got a gobble. A tom made his way onto the property from the opposite end. Great! I was all packed and ready to leave. I loaded up the gun again and just sat down where I stood since my chair was packed as well. It took about 10 mins but I managed to call him to 20-25 yards and he strutted and gobbled the whole way. He stopped close to where I missed the jake on opening day. Anyway, I didnt feel confident taking the shot due to a few obstructions in the shooting land. I just needed him to take a couple more steps to get a truly ethical shot off, but he just stood there for ten mins. Since my decoys werent out, he knew something was up with the calls that brought him in and eventually slowly backed out exactly how he came in. Although he wasnt as big as my opening day bird, he was likely a 22-23lbs and far more impressive then my opening day Tom. He lives to see another day and my season continues...

I put it into a salt/sugar brine for 36 hours. I used a XXL Ziploc clothing bag for the brine bag. Then placed it into a cooler with ice. This worked really well actually.

We then put a dry rub on it and filled the carcass with apples and onions.

About 11 hours cooking around 220'F... it was absolutely amazing!

We forgot the maple glaze but that doesn't matter. Any tips to prevent the drumsticks from drying out? Maybe tin foil?
 
That looks great bud..... Easiest way to keep anything from drying out is to cook it in a roasting pan (no lid) and baste it often with the drippings......

Thanks! It tasted great with zero game taste as well. Basting does work, but with the green egg you don't want to open it at all if you can avoid it. I have used tinfoil on pheasant drumsticks in the past; I might try that next time. The thigh and breast meat came out perfectly, it is just the drumstick and wing meat that was a bit dry. It doesn't matter that much as my golden retriever goes absolutely bonkers for turkey and he didn't seem to mind that the drumstick meat was a bit dry.
 
So has anyone done up a fan mount or in the process of doing so with this years bird?
I always like to hear about different things people are doing to preserve memories o the hunt...
I dabble a little and have a couple fan and wings mounts on the go right now,
Really wish I wasn't so computer illiterate or I'd post up some pictures
If anyone in around London Ontario area want something done pm me, I also do euro deer and moose mounts

This years fan and wings are currently drying. Crappy lighting in this picture, but this was last years mount.



This year I'm going to utilize the wings by doing something along the lines of this

 
That wing mount is the same as I did, take your time taking all the wing bones out and get rid of any skin that was on the inside (armpit)
I used the whole feet and injected them with a 2 part preservative and even added a whitened skull
 
Got this guy this morining using an Iver Johnson that was given to my dad by my great grandfather. I'm in the process of restoring the shotgun and thought it would be fun to take the old girl out into the field for a hunt.

Awesome. I like that you are getting that family firearm out into the field. What ammunition did you use?
 
I am going to go out to the farm later to check the camera. Sounds like my brother is coming up this weekend. Maybe I can put him on a bird too.
 
father-in-law is coming over at 4:30 tomorrow morning to try and get him a bird. we have to make it quick, I have to put my kids on the bus for 8:00 and my wife leaves for work at 7:30..........
 
Thanks. The ammo is nothing special just Remington 2 3/4 number 5 shot. 17 yard shot.

I thought it looked like one of those old Remington Express Long Range shells. I've got some for my 16 gauge, though I am going to use the paper hull shells instead I think.
