Out with Your Tongue...

my drunk grandma eats tongues. She would probably eat the ####### too if no one found out.
 
I used to eat beef tongue as a kid. I was never too fond of it. I hunted caribou a few years back and the cook made a bunch of pickled tongue and it was outstanding! Since that time, I save all our elk and moose tongues. I simmer them in water and pre-packaged pickling spices with a splash of vinegar for about four hours. Take them out, let them cool slightly, peel, slice and serve with Keen's Hot Mustard. Even the naysayers come back for seconds... well, most of them anyway :).

Moose , deer, caribou, beef.... boil em, skin em, chill em. slice thin..on dark rye bread with onions and hot mustard...thats the way to eat em :) ..if you don't try it.... you cant honestly say you don't like it !
 
I used to make corned tongue on a regular basis:

1 U.S gallon/128 oz. water
1.5 cups sea/pickling salt
2 cups brown sugar
1.5 tsp saltpeter
2 tbls pickling spice
8 dried chili peppers ripped in half
8 cloves garlic halved lengthwise

This is enough for a couple of large beef tongues.

Wash the tongues

put brine in a crock

place tongues in the crock with a plate on top to weight them down

keep someplace cold, 2-3 degrees, for 3-4 weeks (depends on size)

rinse and cook in fresh water until the skin can be easily pulled off
 
I like pickled tonque but when I once worked in a hospital (lab) where I seen a lot of jars with pickled human parts so be careful which jar you eat from.:eek:
 
there is not much better then a good boiled tongue . let cool the peel and slice thin a littel mustard and some good homemade bread yummmy DUTCH
 
I don't hunt.
When I ask at the meat/butcher counter at my Supermarket(s) if they have "tongue", they look at me as if "Should I call security or just tell him NO?"
 
I tried pork tongue once when traveling in Asia. It was cooked in a really good sauce of some sort and was actually really good. Yup, I was surprised too!! :D
 
Any I've tried ... beef, moose & deer ... I've liked !

Reminds of the story of the lady at the butcher shop:

Butcher: Madam, would you like to try some nice fresh tongue ?

Lady: Eewwww, I could never eat anything out of an animal's mouth. Just give
me a dozen eggs please !
 
I tried moose tongue two years ago and I must have done something wrong because after three hours of simmering it was basically like a cross between stew meat and a spare tire.

I think I'll try to pickle the next one I get...
