So what's my options?

I've read that Sig offers the service at a price ($200USD), but is that a US only option?
Is the only other option then to buy the parts myself and do it myself?

Your best option is do it yourself or buy the parts and have somebody do it for you. If you go to the Top Gun Supply website and click on the FAQ section at the bottom of the page it will at least give you a list of parts that you need. Unfortunately they don't ship to Canada but it's a good place to start.

Your "west German" isn't gonna be a "west German" anymore once you change the internals so what's the point? Or do you just like seeing the roll marks that say made in West Germany?

Just buy the decocker lever, decocker spring, da/sa hammer and hammer strut pin then install the new hammer with decocker and spring and you will have a da/sa model. My p226 was a da/sa model that I converted myself to a dao model. It took me about 20 min to take apart and install the new parts and put back together, very easy pistol to work on. There are plenty of detailed YouTube videos that show how to disassemble and assemble the p226 as well if you are not sure.
