You can buy replacement STAINLESS STEEL pistons and cups for the gas system in your SVT40 - to protect against the effects of corrosive ammo. However these are expensive.

Yes, I know You should just keep you gun fanatically-clean but gezz, I'd like a bit of extra protection.

Any thoughts on just Parkerizing, Cerakoting or Powder Coating the original parts?

Is that going to add to the dimensions and maybe create fit problems?

Separate issue but what happens if you parkerize the bore in a Lee Enfield with an oversized bore and chamber? Will that tighten the bore and chamber at all?

Parkerizing won't help with that particular issue. Corrosive ammo will make short work of it.

Parkerizing will 'etch' the bore somewhat. Definitely won't improve accuracy......

Okay will cerakote or powder coating be a better solution to beat corrosive ammo damage?

Both are a coating that adds thickness. And I'm not sure that you can powder coat inside a bore. And if you can only powder coat the piston but not the bore of the cylinder then you still need to clean and oil the bore and might as well do the piston while you're at it.
