Foodsaver Vacuum sealer, Costco has sealers and bags at a great price in my area. Anything that you seal, you can add spices or marinade in the bag too. Suck out air manually and seal it if its wet.
 
oh they look soooooooooo gud! We ran out of our last batch of pepperettes too soon. I wouldn't mind taking in another batch of venison right now, but the rush is on at the custom meat shop, hunting season just ended.
Yes, a vac-pak machine is the only way to go.

Nothing wrong with bringing in your "scraps" for pepperoni and sausage..... Me and the boys have had several great roasts and steaks from the two I harvested this year..... We look forward to the sausage in days to come....

Wanted a third so I could get some pepperettes made up after taking the good parts myself but the black powder gods weren't in my corner.... Lol

I find that pepperoni doesn't need any special sealing too keep it fresh in the freezer.I usually turn a whole buck into pepperoni and divide it between a few buddies.I freeze it right away before it looses any moisture usually in a big clear plastic leaf bag.I pull out what I need and hang it by my wood stove overnight and then keep it in my deli drawer in a plastic unsealed grocery bag.Its usually good for about 3 weeks.If you want it dryer just leave some sticking out of the bag.I sent in 52lbs of WT deer this year de boned for my pepperoni.Cost was $211 with the pork fat included
 
What did you make yours from Lookie? Is that Gewsie pepperoonies?! I had 25 pounds of Gewsie pepperoonies made a couple weeks ago. Picked up some spices at Kabellars the udder day to make some Gewsie jerkee too! Thats the next pro-jekt!! Going to pick me up a Bradley smoker and all the hardware for next season and make me own pepperoonies and snauzages from now on too!

that dam foot hurts so bad and for so long now, I could almost squeeze that trigger! Oh sorry, I forgot this is a sausage food thread!
