There are no large flocks of wild pheasent in Ontario to hunt. i beleive that essex county ( gossefeild north & pelee twnshp) is the last place that actually releases pheasents for open season. Most of the pheasent that are seen are pen raised pheasent that where relaesed. It is beilved that those brids will live for about 2yrs max, depending on the winter conditions and the prevelance of coyotes and foxes.
As for the price on preserves i pay anwhere from $10 to $20 a bird with a min of 3 bird per hunter. As for other birds one place i hunt does have chukars but the other place is nothing but pheasents. I am sorry I can't help you with a preserves in your area. you might want to see if Ontario All Pointing Breed Field Dog Club has a local branch in you area I am sure someone there would be able to tell you if there is a preserves in your area.
