Pickled Eggs THREAD

My God, I LOVE these things! I made a batch and they have been sitting in my fridge since Sunday night.

I Boiled 13 eggs for 15 minutes

My brine was:

1.5cup pickling vinegar
.5cup cider vinegar
1cup water
3/4tsp cyan pepper
1tblsp Italian seasoning
1tblsp Montreal steak spice
2tblsp salt
1 bay leaf
2 cloves of garlic - crushed
(I forgot to add black pepper :redface:)

I boiled/simmered that for about 5-10mins

I cup up 1/2 an onion into rings and prepared about 10 whole cloves of garlic.

I put on the kettle and filled a 1.5L pickle jar with boiling water to sterilize it.

I packed the jar with the eggs, onions, garlic and then poured the hot brine over the eggs. Sealed the jar and put it in the fridge.


So this jar of eggs has been in my fridge for 52hrs and every time I open the door I stare at it.... it calls to me... delicious, delicious pickled eggs... I need help... I need strength.... I want to open the jar.....

how long do you guys leave your eggs before eating them? I need some support. I figured a week would be good but I'm not sure I can wait that long. I need a bigger jar and another batch to sit in the fridge while I occupy my self with the last batch.

when i was a kid they sold those at the gas station by my house for a quarter apeice
When I was a kid there was this awesome Mennonite general store between Arthur and Stratford and they had pickled eggs, pickled sausage, beef jerky and summer sausage in a sack (we called it stinky meat). It was a great place to stop.
 
I usually just fill my gallon with eggs,and pour a quart jar of medium,or hot pickled banana pepper rings,and add a few garlic cloves to them.Yummy every time.

I make three gallons two weeks before deer camp.
 
Try putting the eggs in cold water and then bringing to a boil. Remove from heat and let stand, covered for 15 minutes. You avoid nasty green yolks that way.
 
they don't last that long around here- i just use the juice off the polski orgorki pickles- peeling in a b*th though
 
Hmm, i know a farmer who gave me his recipe..75% vinegar and 25% of 7up or Sprite if i remember well, it make them more sweeter! Never tried it myself, but his customers are always screaming for more :D..

I can't stand the commercial crap they are selling :eek:! I guess i'll have to make them myself.

Oh well, always a good thing to keep at hand in case of food shortages :D. And i know 2 places where i can find eggs in bulk. Now i need a link to learn how to make them :dancingbanana:..

you're supposed to use CHICKEN eggs, not the stuff you find in the woods
as for the link, try pickled eggs in your google
