Been busy but at least my eggs have time to age in the fridge.

I asked Hungry to sticky but he said he had to ask GT. Haven't heard back and no sticky so I guess it got the kaibosch

there are a few stickied threads that dont make sense in the ot.

especially one that is locked :rolleyes: but hey whatever.
 
I think the secret is focus on the components (just like reloading). In this case the main ingredient may be the pickling vinegar but the attitude comes from the extra cup of vinegar (I've been using malt or apple cider) and the spices (I've been using 1 tbsp Italian spice but 3 tbsp cayenne pepper). Plus any sweetening (I've used Sprite instead of the extra vinegar and up to 1/2 cup sugar).

Hard to improve on perfection but I'm going to try 1/2 cup wine vinegar with the 3 tbsp cayenne pepper and 1/2 cup sugar, instead of the 1 cup malt vinegar, 1 tbsp pepper and no sugar in Wally's original recipe on the weekend.
 
I was really close to putting 50 eggs on the boil last night but I was short of a few supplies. I wanna do one, almost the same as my first batch but i wanna try 7up/sprite instead of water and add the dill sprigs as pitdogboy did.
 
I suspect addition of vodka may be the basis of a PhD thesis on the topic of pickled eggs.

That said, I've discovered if you are able to train yourself to forget, or otherwise attribute your forgetfulness to pickling eggs, the eggs may last in the back of the fridge for more than 24 hours (and up to 6 months, according to some).

In any event, the trick is once the eggs are sitting in the back of the fridge do not let yourself think about them for one moment, especially how delicious, delicious they might be.

It's like quitting smoking.
 
The real trick is cycling them...1 jar ready and one a few weeks off the last one freshly pickled.

I am going to make drunken picked eggs next time for sure. Mine last batch has been in the juice for a month now!

The GF goes away next week and it's on like Donkey Kong for pickling things and my liver!
 
I wonder if using chipoltes would work or be gross? (Smoked jalapenos)

Smoke + Vinegar is usually a good combo.

I haven't made any pickled eggs yet, keep forgetting...Although I think I have some 4L jars at work- Not Mason jars, but they look like giant pickle jars.
 
I'm thinkin' about getting into it tonight :D I have all the supplies (including fresh dill, thanks PDB ;))
 
OK, tryin' out a new recipe

5.5cups Pickling vinegar
2cups Apple cider vinegar
2cups water
1.5cups sprite
12 cloves garlic, slightly crushed, coarsely chopped
1.5 large white onions
1tsp sage
1tsp cumin
2tbsp pepper corns
2 heaping tbsp salt

This ended up being enough to fill the 4L jar and I bet it woulda filled the 1.5L jar too but I added some more vinegar and water to the hot brine to make sure.

So here's what 46 eggs in a pot looks like :D (woulda been 50 but 2 were cracked and 2 were eaten)

It took me 25mins to peel all 46. Probably would been faster but I wasn't getting optimum egg-shell separation.

46 eggs, 1.5 large onions and 5.5L worth of jars ended up working out really well. Now I have to see if I can keep my mitts off those jars for 2 weeks :ninja:

After making those eggs I made a big pot of spaghetti sauce... my feet hurt.

Hey Gatehouse...I bet chipolte would be awesome. I jammed a bunch of habanaros in my last ones.

My batch is ready but I am going to give them another week.

The dill looks good but I really have no idea if the flavour will be tasty.

I'll report back when I crack them
 
x2 on the smoked chipolte thats a great idea ..there going in on the next batch glad i came up with that idea :D....anyone else tri pickkled sausage i made some same kinda recipe for the brine just subed in some nice garilc,ukranian sausage it was i big hit ill have to make more and add a pic :D

I was thinking about buying a sausage but it's a good thing I didn't as those eggs used up all of my containers :D

Man, I hope the Cumin tastes OK.
