Pigeon Recopes

I have been doing a fair amount of goose hunting in the fields this year, and on the slow days have considered taking a few pigeons. Anybody ever eaten them? If so, what is the best way to cook them? Not looking for negative opinions, on how they are a rat with wings, hahaha, these are farm pigeons, feed on mostly on corn, and after a half day in the cold with no geese, those little bastards start looking pretty meaty!

My daughters and I go shoot them as training for our new duck dog. We breast them out, wrap the breasts in bacon (secured with a toothpick), and cook them in the oven on a little stainless rack until the bacon is crispy. The kids LOVE it!

Squab is right. Its just meat cook it how you would cook anything else. I do the stand on the wings and pull on the feet thing to get the breasts out and cut the meat off and fry it in butter with some flower and spices.
 
I've got a cook book from the UK with a few recipes, but I've never tried them (never had the chance to shoot any pigeons yet).

I wouldn't hesitate, though.
 
They are excellent eating. You can make a fine clear broth out of them just like you would when making chicken noodle soup. They are also good as a pot roast with white wine and some root vegetables. You will need to cook it longer than chicken and the texture of older birds can be similar to grouse.
