I've got a para p16-40 ltd that's a double stack in .40cal. It's a nice pistol to shoot, if you can handle the wide grip.
I would really recommend you pick the pistol you can hold onto the best. Single or double stack can make a big difference for control and accuracy.
The only cheap 1911 I would recommend anyone buy would be an Armco tuned norinco. Don't bother with any other discounted or slightly cheaper 1911's.
If I were to buy another I would look at Para, Kimber, & STI/SVI. The STI/SVI's are certainly the nicest but also the most expensive. The Kimber's are great value and offer a few more options, but the .40's with adjustable sights only come in a few models on the expensive end and I believe they are all single stack. Para has both single and double stack and is probably the cheapest quality option for a double stack .40cal pistol.
If you're going to shoot IPSC, spend the extra $100 and send it to a gunsmith and have the trigger tuned. It will make it much easier to shoot consistent fast groups.
TSE has some of the best pricing I've seen on Kimbers in Canada. Freedom Ventures or Armco are great sources for STI's but you might have to wait for a trigger job. I bought my para from Phoenix range in Edmonton for the best price I could find at the time.
I do find 1911's easier to shoot than a double action or production pistol like a glock, sig, H&K ect. It's my preference, but these makes do offer some cheaper entry level pistols for a great value.
