Have been out in the field and praticing with various deer calls, and found that I do get the deer's attention. However, when the deer finds out that I am the one who calls like a deer, the rund away the next time I try to call them with a deer call.

What did I do wrong ?

You educated them. Now they know that sounds is made by a human/hunter and they will be more difficult to call in once deer season arrives. Just try a new area next time and try to do it without them figuring out it was a human calling.

I guess the trick is to remain concealed all the time during calling of the deer, and never expose yourself until one has to shoot ?

Or they smelled that I had a deer sandwich for lunch ? Sometimes I wonder if the deer, through our scent or breath can smell that we humans, like the other predatory, omnivorius animals, would like to feast on them as our next meal ?

You taught them a very valuable lesson. Just because you're not hunting, doesn't mean you dont have to hide.
When I practice my elk bugles, I do it at an Elk farm. No need to hide, and I can be quite close to hear all the sounds. And I don't care if I teach them anything.

Besides, its really cool when one of those big brutes is staring at you 20 yards away and bugles back.

Not sure on how true this is, but I've heard there is a wildlife aggrevation charge if your caught calling game outside of season. again, not sure how true that is so dont shoot the messenger.
